  1. Cook lentils: Rinse lentils. Add to pot with water, salt, turmeric, tomato, and green chilli. Simmer 20–25 minutes until soft. Mash lightly.
  2. Prepare tarka: Heat ghee. Add garlic slices and cook until golden.
  3. Add spices: Add cumin seeds, dried red chillies, and chilli powder; cook 10–15 seconds.
  4. Finish: Pour hot tarka over lentils. Stir gently. Garnish with coriander and serve.
