  1. Heat oil: Warm oil/ghee in a heavy karahi. Add cumin seeds and let them crackle.
  2. Add chicken: Add chicken and brown for 6–7 minutes until lightly golden
  3. Add aromatics: Add ginger-garlic paste and fry for 2 minutes until fragrant.
  4. Add spices: Add salt, turmeric, crushed coriander, chilli flakes, and black pepper. Mix well.
  5. Add tomatoes: Add all tomatoes and green chillies. Cook uncovered on medium-high heat until tomatoes break down and oil separates (10–12 minutes).
  6. Simmer: Reduce heat and cook for 5–7 more minutes until chicken is fully tender.
  7. Finish: Stir in garam masala, garnish with ginger and coriander. Serve hot.
